Support the locavore movement at The Fullerton Bay Hotel's Clifford Pier restaurant when it ties up with homegrown fish farm and supplier Ah Hua Kelong. One of the first movers in the sustainable seafood industry in Singapore, Ah Hua Kelong harnesses modern technology in its operation that produces both farmed and wild-caught seafood such as pearl grouper, sea bass, prawns, flower crabs and mussels. In its first collaboration of the year, Clifford Pier puts together a menu of 15 creations by executive sous chef Zacharie Ong and the Ah Hua team. Pick from Lala Chawanmushi with Brown Butter and Garlic Kudzu; Grilled Vannamei Prawns with Uni Butter, Shio Kombu, Soba cha Puff; and Pearl Grouper Fish Soup amped up with ginger and evaporated milk, and garnished with fried quail egg.
