Always fascinated by ikejime - the Japanese method of euthanizing fish without pain and hence, keeping the quality at an optimum level? See it in action as Tetsuya Wakuda of two Michelin-starred Waku Ghin teams up with fish expert Naoki Maeda to demonstrate and explain the process at just one of the many culinary masterclasses planned for this year's Epicurean Market at Marina Bay Sands. The weekend food fest on Dec 14 and 15 will see over 50 booths offering bite-sized specialities from MBS's award-winning restaurants and more, to be washed down with myriad tipples crafted by resident mixologists. You can eat and then shop at the Christmas market which boasts unique sustainable food products from Yunnan caviar to Mottainai omega lamb; 'bread ale' brewed from surplus bread supplied by top bakeries; pure milk vodka and organic wines.
