He's back. In a clear case of active aging, veteran Swiss-born chef Otto Weibel is in the thick of the restaurant action again with the opening of Black Marble - a steak and grill concept at the new Raffles Holland V shopping mall. The 73-year-old doesn't show signs of slowing down and says that he wants Black Marble to "stand out as a destination for people who want good quality food at affordable prices", in a cosy environment with good service provided by the same team from his earlier venture Otto's Deli Fresh. Beef is the main star here, with a selection of cuts from Australia, Japan and the US, grilled simply with no fuss. Head chef Jay Siaw also whips up non-steak treats such as pan-seared foie gras with blueberry compote, and lobster and scallop saffron risotto.
